Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down into starch that thickens the soup and gives it a smooth body.
Onions
Add savoury sweetness and aroma as they soften in the water.
Cream or rich milk
Adds fat and richness, giving the soup a silky, mellow texture.
Butter
Adds fat and a rounded, rich flavour to finish the soup.

The step that matters

Pass the mixture through a sieve. Cooked potato and onion must be pushed fully through the sieve to create a smooth, even texture; lumps left behind make the soup grainy.
