Why it works: Flour and pepper are a kitchen classic. They rank in the top 19% of all ingredient pairs, and cooks put them together in 50,459 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Liver and Bacon
Ingredients
Directions
Prepare the liver
Pour boiling water over the liver slices and let them stand for 5 minutes.
Wipe dry.
Coat the liver slices thickly with flour.
Fry and braise
Cook the bacon over medium heat for 3 minutes.
Add lard if necessary.
Add the liver slices to the hot bacon and fry for a few minutes on each side until browned.
Pour in enough boiling water to half-cover the liver.
Season with salt and pepper.
Cover tightly and simmer gently for 20 to 30 minutes.
Make the gravy and serve
Remove the liver to a hot dish with the bacon.
Boil the remaining liquid in the pan, stirring.
If too much liquid has evaporated, add a few spoonfuls of boiling water.
Boil the mixture, stirring, then pour over the liver.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calf's liver
- Is the main meat, cooked gently so it stays tender while browning on the outside.
- Bacon
- Renders fat into the pan for frying and adds salty, smoky flavour to the liquid.
- Flour
- Coats the liver so it browns and thickens the pan juices into a gravy.
The step that matters
Simmering the liver gently. Covered, gentle simmering keeps the liver tender; boiling hard toughens its proteins and makes it rubbery and dry.
