What each ingredient does

Okra
Provides the main vegetable body, which softens into a tender texture when boiled.

The step that matters

Boil until tender without breaking. Okra pods are delicate, and overboiling softens the cell walls too far, so they split and turn mushy. Checking for tenderness at the low end of the time range helps keep the pods whole.
