What each ingredient does

Rice
Starch grains absorb boiling water, swell and soften into tender, separate grains.

The step that matters

Boil rapidly without stirring. Rapid boiling keeps the water moving so the grains cook evenly. Stirring rubs loose surface starch off the grains, which can make the rice gummy and sticky.
