Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Cocoa-nut Loaf-cake
Ingredients
Directions
The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Make the batter
Cream the butter and sugar together.
Add the egg yolks and beat until very light.
Mix in the milk, then add the flour and lemon, and beat well.
Stir in the grated cocoa-nut.
Beat the egg whites to a stiff froth and sift the baking powder over them.
Add the egg whites to the batter at the last moment and mix lightly but thoroughly.
Bake and finish
Prepare 2 loaf pans lined with thin paper and greased with lard.
Divide the batter between the pans, filling them no more than two-thirds full.
Bake in a moderate oven at 350°F (175°C) for 45 minutes to 1 hour.
If the cake browns too quickly, cover it with thick paper.
Do not let it bake rapidly enough to crack the cake, or it will not be light.
When done, remove from the oven and cover the top with fresh grated cocoa-nut and sifted powdered sugar.
Set on a sieve to cool and handle very carefully.
Remove the paper when cool.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Creamed with sugar to trap air, giving the cake a tender, rich crumb.
- Eggs
- Yolks add richness and structure; whipped whites lighten the batter and help it rise.
- Flour
- Provides the structure that holds the cake together as it bakes.
- Baking powder
- Releases gas in the batter to make the loaf rise and stay light.
- Sugar
- Creams with the butter for air and adds sweetness and browning.
- Grated cocoa-nut
- Adds moisture, body and coconut flavour to the crumb.
The step that matters
Folding in the egg whites. Whites hold air only until they deflate, so the batter must be mixed lightly but thoroughly and baked promptly. Over-mixing knocks out the air and makes the loaf dense.

- Almondfits better
- Pistachiofits better
- Milletfits better
