Egg Icing

Ingredients

Directions

Make the icing

  1. Beat the egg whites until frothy, not stiff.

  2. Gradually add the sugar while continuing to beat.

  3. Flavor to taste with your choice of flavoring, adding very little liquid.

Finish and spread

  1. When stiff enough, dip a knife in cold water and smooth the icing over the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whip into a foam that gives the icing its light, airy structure.
Sugar
Adds sweetness and, as it dissolves into the foam, thickens the icing.

The step that matters

Adding flavoring with very little liquid. Extra liquid loosens the foam of whipped egg whites and sugar, so the icing may not stiffen enough to hold its shape on the cake.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, orange, vanilla):

  1. Figfits better
  2. Blueberryfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, egg, orange, vanilla. Candidates are from the same food group and used in at least 100 recipes.
