Peach Fritters

Ingredients

Directions

  1. Peel, stone, and halve the peaches.

  2. Sprinkle peaches with grated lemon peel and sugar, then add rum or brandy.

  3. Cover and let sit for 2 to 3 hours, then drain.

  4. Make a batter for fruit fritters using the liquor from the peaches.

  5. At the last moment, fold in beaten egg whites until stiff.

  6. Ensure the batter is thick enough to coat the fruit.

  7. Heat deep lard in a saucepan until boiling.

  8. Dip each peach piece into the batter and drop into the hot lard.

  9. Fry until golden-brown, then remove with a skimmer to drain on brown paper.

  10. Sift powdered sugar over the fritters and serve in a pyramid on cut paper.
