What each ingredient does

Powdered sugar
Dissolved in water to sweeten the juice and keep the sorbet from freezing rock-hard.
Rum
Added after freezing to add aroma and flavour and soften the frozen texture.
Brandy
Added after freezing to add aroma and flavour and soften the frozen texture.

The step that matters

Freeze the mixture very hard. Sugar and alcohol lower the freezing point, so the mixture must be frozen solid before the rum and brandy are stirred in. Adding them too early can leave the sorbet slushy and slow to set.

Swap the lemon

How well each one fits the dish's main ingredients (rum, orange, champagne, sugar, brandy):

  1. Pineapplefits better
  2. Vanillafits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against rum, orange, champagne, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
