The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavour and bulk of the fritter.
All-purpose flour
Forms the batter's structure, setting it firm while frying.
Eggs
Yolks enrich and bind the batter; whipped whites lighten it and help it puff.
Lard
Conducts heat for frying and gives the fritters a golden, crisp crust.

The step that matters

Folding in the beaten egg whites. Stiff whites trap air that expands in hot fat, lightening the fritter. Folding gently preserves that air; stirring vigorously deflates the batter and yields dense fritters.

Swap the nutmeg

How well each one fits the dish's main ingredients (clam, flour, egg, pepper):

  1. Parsleyfits better
  2. Jalapenofits about as well
  3. Nutmegthe original
  4. Turmericfits about as well

Fit is the average pairing score against clam, flour, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
