Calf's Head a LA Terrapin

Ingredients

Directions

  1. Cut the meat from the cheek of the boiled calf's head into 1-inch square pieces.

  2. Stir the pieces into the Terra- pin Sauce.

  3. For best flavor, prepare this dish a few hours before serving.

  4. Slice the hard-boiled egg whites and mix them in with the meat.

  5. Place the bowl over a kettle of boiling water (bain-marie) for 30 to 45 minutes to heat without cooking.

  6. Serve in a casserole or deep dish.
