Ingredients

Directions

  1. Ensure the goose is tender by checking the breast bone and wings.

  2. Draw, singe, and wipe out the goose without washing it.

  3. If necessary, rinse the goose with cold water mixed with baking soda.

  4. Boil apples, onions, and herbs in enough water to cover until soft.

  5. Rub the mixture through a sieve and add enough mashed potato to form a firm dressing.

  6. Season with pepper and salt, then stuff the goose and sew it up.

  7. Truss the goose securely and place it in a roasting pan.

  8. Add a large lump of butter or drippings and boiling water to the pan.
