Small Pound-cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the egg yolks and beat until very light.

  3. Beat the egg whites to a dry froth and fold them into the mixture alternately with the flour.

  4. Add the lemon juice, lemon rind, and preserved lemon peel, mixing well.

Bake and finish

  1. Grease gem or patty pans and fill them with the batter.

  2. Bake in a 400°F (200°C) oven for 15 to 20 minutes, testing with a broom whisk.

  3. Cool on an inverted sieve and ice the top with lemon icing if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites add lift and an airy crumb, while yolks enrich the batter.
Butter
Creamed with sugar, it traps air and adds richness and a tender texture.
Sugar
Creamed with butter, it helps trap air and adds sweetness and gentle browning.
Flour
Provides the structure that holds the batter together as it bakes.
Preserved lemon peel
Adds concentrated, aromatic lemon flavour and chewy bits throughout the cake.

The step that matters

Folding the whipped egg whites. Egg whites hold air only when whipped to a dry froth and folded gently with the flour. Overmixing deflates the foam, which makes the cake dense rather than light.
