What each ingredient does

Brussels sprouts
Are the main vegetable, so they supply the body, flavor and texture of the dish.

The step that matters

Cook until tender. Brussels sprouts go from tender to mushy within minutes of boiling. Checking them often and draining as soon as they are tender keeps their texture firm and their flavor fresh.
