What each ingredient does

Oysters
Provide the main ingredient, with a tender, briny flavour once cooked through.
White onions
Brown to add sweetness and a crisp, golden texture in the hot fat.
Butter
Adds richness and nutty browned flavour when melted in the pan.
Fat for frying
Transfers heat evenly to the onions and crisps their surface as they fry.
Cayenne pepper
Adds a mild, lingering heat that seasons the butter and oysters.

The step that matters

Frying the onions until golden, then draining them. Onions turn from golden to dark brown quickly. Stopping at golden gives sweetness and crispness, while over-browning makes them bitter and burnt. Draining removes surface fat so they stay crisp on the platter.
