What each ingredient does

Beets
The main vegetable, providing earthy sweetness, color, and a tender texture when boiled.
Butter
Adds richness and a silky coating that carries the seasoning over the beets.
Vinegar
Adds acidity that sharpens the sweet earthiness of the beets and gives a pickled tang.

The step that matters

Boil the beets whole and unpeeled until tender. Leaving the beets uncut and unpeeled keeps their color and juices inside, so they do not bleed into the water. Cutting or undercooking them leaves the flesh tough and dull.
