Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. In a bowl, combine the yolks, powdered sugar, lemon juice, and grated lemon rind.

  2. Steam the mixture until it thickens.

  3. In a separate bowl, whip the egg whites until stiff peaks form, then gently fold them into the steamed mixture.

Bake and serve

  1. Pour the mixture into a pre-baked deep pie crust.

  2. Bake in a 350°F (175°C) oven for a few minutes, being careful not to overbake as the eggs will toughen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling as they set, and whipped whites add lightness and structure.
Powdered sugar
Sweetens the filling and dissolves smoothly into the lemon juice and yolks.
Lemons
Provide the juice for sourness and the rind adds concentrated lemon aroma.

The step that matters

Baking the filling. Egg proteins set with heat, and overbaking causes them to tighten and toughen, making the filling grainy and weepy rather than silky.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):
