Why it works: Cinnamon and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.
Prepare
Preheat the oven to 350°F (175°C).
Make the batter
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
In another bowl, combine the flour, baking soda, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the creamed mixture, alternating with sour cream and molasses.
Fold in the raisins and lemon rind.
Bake
Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Butter
- Creams with the sugar to trap air, giving the cake a light, tender crumb and rich flavour.
- Eggs
- Bind the batter and add structure as the cake sets in the oven.
- Flour
- Forms the main structure of the cake as its proteins set during baking.
- Baking soda
- Reacts with the acidic sour cream and molasses to produce gas that helps the cake rise.
- Sour cream
- Adds moisture and a slight acidity that tenderises the crumb and activates the baking soda.
- New orleans molasses
- Adds moisture, deep sweetness and colour, and contributes to browning.
The step that matters
Alternating the dry ingredients with the sour cream and molasses. Adding dry ingredients gradually and alternating them with the liquids keeps the batter smooth and well emulsified. Overmixing once flour is added develops gluten, which can make the cake dense and tough.
Swap the raisin
How well each one fits the dish's main ingredients (sugar, egg, flour, cinnamon, nutmeg, butter, cream):
- Raisinthe original
- Vanillafits about as well
- Figfits less well
- Blueberryfits less well
Fit is the average pairing score against sugar, egg, flour, cinnamon, nutmeg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
