Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Sweet cream
Adds richness and a light, airy texture when whipped and folded in.
Sugar
Sweetens the mixture and balances the tartness of the fruit juice.
Raspberry or strawberry juice
Provides the main fruit flavour and colour, plus some acidity.

The step that matters

Stir constantly while chilling on ice. Stirring keeps the mixture cool and moving so it thickens evenly. If it sets in patches or gets too cold, the whipped cream will not fold in smoothly and the texture becomes lumpy.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberrythe original
  4. Raisinfits about as well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
