Cinnamon Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Melt the lard and butter together over low heat.

  2. Sift the flour, sugar, and salt into a bowl.

  3. Add the milk, melted lard and butter, egg, and dissolved yeast cake; beat until the batter drops clean from the spoon.

  4. Set the bowl in a warm place to rise.

  5. In the morning, work the dough lightly and roll it out to 1 inch thickness; let it rise again.

  6. Spread sour cream or butter over the dough, sprinkle generously with sugar and cinnamon, and bake in a preheated oven at 400°F (200°C).
