Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Citron Preserves

Ingredients

Directions

Prepare the citron

  1. Select a sound citron, peel it, and divide it into quarters.

  2. Remove the seeds and cut the fruit into small pieces.

  3. Weigh the fruit and use 1-2 lb of loaf sugar per 1 lb of fruit.

  4. Cook the citron until it is clear.

  5. Drain the citron.

  6. Pour out the cooking water.

Make the syrup

  1. Add the weighed sugar with enough water to wet it.

  2. Boil the syrup until clear.

  3. Add sliced lemons and ginger for flavor.

  4. Add the citron back to the syrup.

  5. Cook together for about 15 minutes.

Jar and seal

  1. Fill jars with the citron.

  2. Pour the hot syrup over it.

  3. Seal the jars.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: beta-phellandrene (minty, terpene).

    Shared aroma: 2-nonenal (fatty, green).

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Provides the main fruit body and bulk that becomes the preserve.
Loaf sugar
Sweetens the preserve and, at this amount, helps preserve the fruit in syrup.
Lemons
Add acidity and brightness that balance the sweetness of the syrup.
Ginger root
Adds a warm, aromatic flavor to the syrup.

The step that matters

Cook the citron until it is clear. Citron is firm and bitter when raw. Cooking it until translucent softens the fruit so it can absorb syrup evenly, and draining the cooking water removes much of the bitterness before the sugar is added.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
