Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the sweet, soft pulp that forms the filling and shells.
Heavy cream
Adds richness and a light, airy topping when whipped.
Fine sugar
Sweetens the pulp and balances the tartness of the lemon.
Lemon juice
Adds acidity that brightens the banana flavour and slows browning.

The step that matters

Pressing the pulp through a sieve. Sieving removes fibres and lumps, giving the filling a smooth texture. Skipping it leaves a stringy, uneven mixture that is harder to spoon into the shells.
