What each ingredient does

Cucumbers
The main vegetable that the brine and vinegar transform into pickles.
Coarse sea salt
Draws water out of the cucumbers and seasons them, shaping texture and flavor.
Vinegar
Adds sharp acidity that gives the pickles their tang and helps preserve them.
Spices
Add aroma and flavor to the pickles.

The step that matters

Make a brine strong enough to float a potato. The salt concentration controls how much water leaves the cucumbers and how well they are protected during the long soak. A weak brine can leave the pickles soft and more prone to spoiling.
