Apricot Tart

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel and halve the apricots, removing the stones and placing the kernels in a bowl with the apricots. Sprinkle with fine sugar.

  2. Butter a tart pan and line it with a thin layer of short pastry. Brush the pastry with egg wash.

  3. Arrange the apricots in the pan in a regular pattern and cover with another layer of thin pastry. Seal the edges well.

  4. Make a small hole in the top, crimp the edges, brush with egg wash, and sprinkle with powdered sugar.

  5. Bake in a moderate oven at 350°F (175°C) until golden.
