Prepare

  1. Clean the anchovies, cut them into shreds, and lay them on a plate.

  2. Poach the eggs in vinegar and water, then place the poached eggs in cold water.

Assemble the mold

  1. Add a little savory jelly to the bottom of a plain mold and let the jelly set.

  2. Neatly arrange the shredded anchovies on the set jelly.

  3. Trim the poached eggs and carefully place them on top of the anchovies.

  4. Gently pour more jelly over the eggs and anchovies until they are covered.

  5. Fill the mold and keep it in ice until ready to serve.

Shared aroma: acetic acid (sour, vinegar).

Egg and vinegar barely smell alike, yet cooks put them together in 12,922 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the central layer, giving the jelly a firm, contrasting texture when sliced.
Anchovies
Add a salty, savory flavor that contrasts with the sweet-savory jelly.
Savory jelly
Sets to hold the eggs and anchovies in place and gives the dish its body.

The step that matters

Let the jelly set before adding the anchovies and eggs. Jelly sets only when cold and firm. If the layers go in before the base has set, they will float or shift, and the pattern will be lost when the mold is turned out.
