Ingredients

Directions

Brine

  1. Select medium small-sized cucumbers.

  2. Prepare a brine that can float an egg and pour it over the cucumbers.

  3. Let the cucumbers sit in the brine for 24 hours.

  4. Wipe the cucumbers dry.

Make the pickling syrup

  1. Heat vinegar until boiling and pour it over the cucumbers.

  2. Let the cucumbers sit in the vinegar for another 24 hours.

  3. Change the vinegar, adding 1 quart of brown sugar, 1 pint of white mustard seed, a small handful of whole cloves, a small handful of cinnamon sticks, a piece of alum the size of an egg, and ½ cup of celery seed.

  4. Heat this mixture until boiling and pour it over the cucumbers.

What each ingredient does

Cucumbers
The main vegetable that is preserved and becomes crisp-tender in the brine and vinegar.
Brine
Salt draws water out of the cucumbers and firms their texture before pickling.
Boiling hot vinegar
Acid preserves the cucumbers and gives the pickle its sharp, tangy flavor.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
White mustard seed
Contributes a pungent, spicy flavor to the pickling liquid.
Alum
Helps the cucumbers stay firm and crisp during pickling.

The step that matters

Wiping the cucumbers dry before the vinegar step. Any brine clinging to the cucumbers would dilute the vinegar and carry excess salt into the pickling liquid, weakening preservation and flavor balance.

Swap the celery

How well each one fits the dish's main ingredients (cucumber, egg, vinegar, sugar, mustard, clove, cinnamon):

  1. Allspicefits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against cucumber, egg, vinegar, sugar, mustard, clove, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
