Ingredients
Directions
Prepare the infusion
Pare the yellow peels of the lemons into boiling water and let it stand for 4 hours.
Remove the peels and add the lemon juice and sugar to the water.
Make the custard
Beat the egg yolks and mix them with the lemon mixture.
Strain through a fine cloth into a porcelain-lined saucepan.
Cook over low heat, stirring continuously until thickened, but do not let it boil.
Cool and serve
Remove from heat and let cool before serving in custard cups.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the custard as they set on gentle heat and add richness.
- Lemons
- Provide the acidity and the aroma of the peel and juice.
- White sugar
- Adds sweetness and balances the sharp lemon flavor.
The step that matters
Cook over low heat without boiling. Egg yolks thicken through gentle heat; if the mixture boils, the yolk proteins curdle and the custard turns grainy and loses its smooth texture.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original
- Datesfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
