Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the cake
Bake a white sponge cake in narrow, shallow pans.
In a saucepan, wet with cold water to prevent burning, then pour out the water.
Make the custard
Add 1 quart of milk and bring to a boil, then let it cool slightly.
Beat the yolks of 6 eggs with 3 ounces of sugar and ¼ teaspoon of salt. Mix thoroughly and add the lukewarm milk.
Stir and pour the mixture into a double boiler, stirring until it thickens to a cream consistency without boiling.
Strain the custard and let it cool slightly, then add 2 teaspoons of vanilla.
Assemble and bake
Cut the sponge cake into 1‑inch slices and arrange them around the sides and bottom of a glass dish.
Pour the custard over the cake.
For meringue, beat the whites of 4 eggs with 4 tablespoons of sugar and flavor with lemon or vanilla.
Spread the meringue over the top and brown slightly in the oven at 350°F (175°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the custard as they set when gently heated, and add richness.
- Milk
- Forms the liquid base of the custard that the yolks thicken.
- Egg whites
- Whip into a foam that forms the meringue topping and sets lightly when browned.
- Sugar
- Sweetens the custard and meringue and helps stabilise the whipped whites.
- White sponge cake
- Provides a soft, absorbent base that holds the custard in the dish.
The step that matters
Stirring the custard in the double boiler. Egg yolks thicken through gentle heat, but if the custard boils the proteins curdle and it turns grainy. Keep it below boiling and stir until it coats a spoon.
