Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main almond flavor and a creamy body once pounded and steeped.
Bitter almonds
Add a sharper, more intense almond aroma to the flavoring.
Sugar
Sweetens the blanc and helps grind the almonds into a smooth paste.
Milk
Adds richness and a soft, creamy texture to the set dessert.
Gelatin
Sets the liquid into a firm, sliceable dessert when chilled.

The step that matters

Simmer gently until the gelatin melts. Boiling gelatin can weaken its setting power, and overheating can make the mixture cloudy or stringy, so it should melt over gentle heat only.
