What each ingredient does

Ripe peaches
Provide the fruit, flavour and bulk that the preserves are made from.
Sugar
Sweetens the fruit and helps thicken and preserve the mixture by binding water.

The step that matters

Boiling with the sugar. Boiling the peaches and sugar for about 20 minutes stirring constantly concentrates the mixture and lets it set; stirring prevents the sugar and fruit from scorching on the base of the pan.
