Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the main body of the croquette, with the whites holding the yolk filling.
Butter
Adds richness and softness to the yolk paste so it holds together smoothly.
Sweet cream
Loosens the mashed yolks into a soft, spreadable paste.
Beaten egg
Acts as a binder so the cracker crumbs stick to the outside.
Cracker crumbs
Form a crisp, golden coating that browns during frying.

The step that matters

Fry until golden brown. The lard must be hot when the coated eggs go in. Hot fat sets the crumb coating quickly and browns it, so the eggs absorb less oil and the coating stays crisp rather than greasy or falling off.
