Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and moisture that give the fritters their soft interior.
Eggs
Bind the batter and help hold the fritters together while frying.
Baking powder
Releases gas that lifts the batter, giving the fritters a lighter texture.
Flour
Adds structure so the batter holds its shape in the hot fat.
Milk
Adds moisture to loosen the batter to a spoonable consistency.

The step that matters

Frying in smoking-hot lard. If the lard is not hot enough, the batter absorbs fat and turns greasy instead of forming a crisp, browned crust. Starting with very hot fat sears the outside quickly, so the fritters brown well and take up less oil.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, flour):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
