Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Produces gas as it ferments, making the dough rise and become light.
Eggs
Add structure and richness, helping the dough hold its shape and colour.
Mashed potatoes
Add moisture and softness, keeping the rolls tender for longer.
Flour
Forms gluten with the liquid, giving the dough its structure and chew.
Lard
Adds fat that tenderises the crumb and softens the texture.
Milk
Adds moisture and richness, softening the dough and aiding browning.

The step that matters

Letting the dough rise fully before baking. Yeast needs time to build gas and structure. Rolls baked before they have risen enough stay dense, while the rising time sets the final lightness.

Swap the potato

How well each one fits the dish's main ingredients (sugar, egg, flour, milk):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against sugar, egg, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
