Why it works: Butter and cream are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 41,516 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Oyster Loaves
6 bunsIngredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the buns
Cut a piece the size of a quarter from the top of each bun and scoop out most of the crumb.
Make the filling
In a frying pan, combine the crumb, butter, and oysters. Fry for 5 minutes.
Add cream or milk and season with salt and pepper.
Fill and bake
Fill each loaf with 4 oysters and replace the crust pieces on top.
Butter the outsides and place in a 400°F (200°C) oven for a short time to crisp.
Serve hot or cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Buns
- Hollowed loaves that hold the filling and crisp into a crunchy shell.
- Butter
- Adds richness and helps the crumb and outside brown and crisp.
- Oysters
- Provide the main flavour and tender, briny filling.
- Cream or milk
- Adds moisture and softness, turning the filling creamy.
The step that matters
Frying the oysters only until they firm. Oysters overcook quickly and turn rubbery when heated too long, so a short fry keeps them tender once the cream is added and the loaves are baked.
