Boiled Potatoes

Ingredients

Directions

  1. Scrape the new potatoes instead of peeling them.

  2. If using old potatoes, pare them and soak in cold water for 4-5 hours before cooking.

  3. In a pot, bring water to a boil and add a small handful of coarse sea salt.

  4. Add the potatoes to the boiling water and cook until tender.

  5. Drain the water and let the potatoes stand uncovered near the fire to dry.

  6. For steaming, cover the pot with a coarse cloth and return it to the fire.

  7. Remove from heat as soon as the potatoes begin to crack or a fork easily pierces them.
