Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and thickens the liquid into a pudding-like texture.
Tart apples
Hold their shape while baking and add a tart flavour that balances the sugar.
Butter
Adds richness and a smooth mouthfeel to the tapioca mixture.
Sugar
Sweetens the apples and helps them soften and caramelise slightly as they bake.

The step that matters

Soaking the tapioca. The tapioca needs several hours in warm water to hydrate fully. Starch granules absorb water and swell, so if they are not soaked long enough the pudding stays grainy and firm.

Swap the apple

How well each one fits the dish's main ingredients (sugar, nutmeg, lemon, butter, milk):

  1. Vanillafits better
  2. Figfits better
