Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the custard

  1. In a saucepan, combine butter, sugar, pounded almonds, lemon juice, lemon peel, and egg yolks.

  2. Stir over heat until the mixture nearly boils.

  3. Pour the mixture into a pie dish lined with light pastry.

Bake and serve

  1. Bake in the oven until set.

  2. Beat the egg whites until stiff peaks form and spread over the pudding.

  3. Just before removing from the oven, sprinkle pounded sugar on top.

What each ingredient does

Egg yolks
Thicken the mixture and enrich it, helping it set when baked.
Egg whites
Whipped into stiff peaks to form a light, airy topping that sets and browns.
Butter
Adds richness and fat, giving the pudding a tender texture.
White sugar
Sweetens the pudding and helps it brown on the surface.
Blanched almonds
Provide the main almond flavour and body to the filling.

The step that matters

Stirring over heat until nearly boiling. Egg yolks thicken as they heat, but if the mixture gets too hot it can curdle or scramble. Stir steadily and stop as it nears a boil so the custard stays smooth.
