Snow Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter in a bowl.

  2. Gradually add the powdered sugar and arrowroot while beating continuously.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Gently fold the egg whites into the mixture.

  5. Add a few drops of your chosen essence and beat for 20 minutes.

Bake and serve

  1. Pour the batter into a tin and bake in a moderate oven at 350°F (175°C) until cooked through, ensuring the outside doesn't burn.

  2. Optionally, slice the cake before serving and dust with powdered sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake its light, airy structure.
Butter
Creaming with sugar traps air and adds richness and a tender crumb.
Arrowroot
Starch that gives the cake a fine, delicate texture with little gluten.
Powdered sugar
Sweetens the batter and dissolves easily into the creamed butter.

The step that matters

Folding in the egg whites. Stirring or folding too hard knocks out the air whipped into the whites, so the cake bakes up dense instead of light and snowy.

Swap the arrowroot

How well each one fits the dish's main ingredients (butter, sugar, egg, lemon):
