What each ingredient does

Eel
Provides the firm, fatty flesh that holds its rolled shape during boiling.
Vinegar
Adds acidity that sharpens the flavour and keeps the eel preserved in pickle.

The step that matters

Boil the eel well in salted water.. The eel must be cooked through before pickling, because vinegar alone does not reliably cook or make fish safe. Thorough boiling also firms the flesh so it holds its rolled shape.

Swap the mace

How well each one fits the dish's main ingredients (pepper, allspice, clove, sage, parsley, thyme, marjoram):
