Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. In a saucepan, combine butter, sugar, almonds, lemon juice, lemon peel, and egg yolks.

  2. Heat over medium heat, stirring until it nearly boils.

  3. Pour the mixture into a pie dish lined with light pastry.

Bake and serve

  1. Bake at 400°F (200°C) until set.

  2. Beat the egg whites until stiff peaks form and spread over the pudding.

  3. Just before removing from the oven, sprinkle with pounded sugar.

What each ingredient does

Egg yolks
Thicken the custard as they set, giving it a rich, smooth body.
Butter
Adds fat for richness and a tender, smooth texture to the filling.
Almonds
Provide body and a nutty flavor to the filling.
Sugar
Sweetens the filling and helps it brown lightly in the oven.
Lemon juice
Adds acidity that brightens the sweet custard and balances its richness.
Egg whites
Whip into a stiff meringue topping that sets and browns on the pudding.

The step that matters

Heating the custard until it nearly boils. Egg yolks thicken when heated, but if the mixture gets too hot or boils, the eggs can curdle and the filling turns grainy. Stirring constantly and stopping at nearly boiling keeps it smooth.
