What each ingredient does

Stale bread
Soaked in milk, it softens and binds the mixture into a moist, tender body.
Suet
Its fat melts during cooking, keeping the pudding moist and rich in texture.
Eggs
They bind the ingredients together and help set the pudding as it cooks.
Raisins
They add concentrated sweetness and chewy texture throughout the pudding.
