Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, creamy body to the dessert.
Egg yolks
Thicken the mixture when gently heated and add richness and colour.
Isinglass
Gelatine-like setting agent that firms the cream so it holds its shape when chilled.
Sugar
Sweetens the dish to taste.

The step that matters

Cooking the custard over low heat. Egg yolks thicken through gentle heat, but high heat or lack of stirring can scramble them, leaving lumps and a grainy texture instead of a smooth cream.

Swap the lemon

  2. Raisinfits better
  3. Strawberryfits about as well
