What each ingredient does

Whole rice
Its starch thickens the milk as it simmers, giving the pudding body and a soft set.
Sweet milk
Provides the liquid that the rice cooks in, becoming creamy and setting the pudding.
Sugar
Adds sweetness and helps balance the flavour of the milk and spices.

The step that matters

Securing the mold and keeping water out. If water enters the mold during the 30-minute boil, the pudding becomes watery and diluted. A tightly sealed mold keeps the mixture moist and lets it set evenly as it cools.
