Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Boil and dry the potatoes.

  2. Mix the potatoes with sweet cream and milk.

  3. Rub the mixture through a wire sieve into the flour.

  4. Mix the warm milk with a little yeast and add it to the flour mixture.

  5. Knead into a dough and let it rise in a warm place.

Shape and bake

  1. Form the dough into rolls and bake at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and a soft, tender crumb to the dough.
Flour
Provides the structure that the dough builds around as it is kneaded.
Yeast
Produces gas as it ferments, making the dough rise and become light.
Sweet cream
Adds fat and richness, softening the crumb and promoting browning.

Swap the potato

How well each one fits the dish's main ingredients (cream, milk, flour):

  1. Arrowrootfits about as well
  2. Potatothe original
  3. Leekfits about as well
  4. Spinachfits less well
