Mashed Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil and mash the potatoes until smooth.

  2. Add milk gradually until desired consistency is reached.

  3. Season with coarse sea salt to taste.

  4. Shape the mashed potatoes into a crown or pineapple on a flat dish.

  5. Garnish with a sprig of celery or parsley on top.

  6. Optionally, brown the outside in a 400°F (200°C) oven or before the fire.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
