Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt mackerel
Provides the main fish flavour and the body of the balls.
Cold mashed potatoes
Adds bulk and moisture, helping the mixture hold its shape.
Beaten eggs
Bind the mixture together so the balls hold their shape when fried.
Butter
Fat for frying that promotes browning on the outside of the balls.

The step that matters

Carefully remove the bones from the fish. Small bones left in the fish can end up in the mixed balls and be eaten. Checking the fish after soaking and boiling water helps the flesh flake cleanly and keeps the texture even.
