Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Roes
Provide the main flavour and the base of the croquette mixture.
Mashed potatoes
Bind the roes into a mixture that holds its shape when formed.
Drawn butter
Adds richness and moisture to the mixture.
Raw egg
Binds the mixture together so the rolls hold their shape while cooking.
Cracker crumbs
Form a crisp, browned outer coating when fried.

The step that matters

Let the mixture cool enough to handle before forming. A hot mixture is soft and sticky, so rolls formed too early can slump or tear. Letting it cool lets the starches and egg set slightly, which helps the rolls hold their shape in the hot fat.

Swap the potato

How well each one fits the dish's main ingredients (roe, butter, egg, parsley, pepper):

  1. Chivefits about as well
  2. Potatothe original
  3. Shallotfits about as well
  4. Capsicumfits about as well

Fit is the average pairing score against roe, butter, egg, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
