What each ingredient does

Roe-shad
Forms the main body of the dish, providing the protein and flaky texture when cooked.
Flour
Forms a thin coating that browns in the hot fat and gives the fish a crisp outside.
Lard or dripping
Conducts heat to cook the fish and browns its coating, adding richness and flavour.

The step that matters

Fry until golden brown. The fat must be hot enough to crisp the flour coating quickly. If the fat is too cool, the fish absorbs grease and turns soggy instead of browning.
