What each ingredient does

Eggs
Bind the mixture and add structure and richness as they set during cooking.
Suet
Adds fat that keeps the pudding moist and rich during long cooking.
Flour
Provides the starch that gives the pudding its body and holds it together.
Moist sugar
Adds sweetness and molasses-like depth while helping the pudding stay moist.
Currants
Contribute concentrated fruit sweetness and chewy texture throughout the pudding.
Brandy
Adds aroma and flavor and helps preserve the fruit-filled mixture.

The step that matters

Boiling the basin for 6 to 7 hours. The pudding must be fully cooked through and kept at a steady simmer with enough water; letting the pot boil dry or the water drop can leave the centre dense or undercooked, since heat must penetrate the thick mixture slowly.

Swap the currant

How well each one fits the dish's main ingredients (raisin, flour, orange, lemon, sugar, egg, brandy):

  1. Vanillafits better
  2. Figfits better
  3. Blackberryfits better
  4. Currantthe original

Fit is the average pairing score against raisin, flour, orange, lemon, sugar, egg, brandy. Candidates are from the same food group and used in at least 100 recipes.
