Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grate the stale bread or soak the crumb of a French roll in warm milk.

Make the mixture

  1. In a bowl, beat the soaked bread with 2-3 eggs.

  2. Add sugar and your choice of flavoring, such as wine, lemon essence, or beaten almonds. Mix thoroughly until well combined.

  3. Pour the mixture into a greased baking dish.

Bake

  1. Bake in the preheated oven until set and golden brown, about 30-40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Forms the body of the pudding and soaks up the milk and egg mixture.
Milk
Moistens the bread so it softens and blends into a custard-like texture.
Eggs
Bind the mixture and set as it bakes, giving the pudding its structure.
Sugar
Adds sweetness and helps the top brown during baking.

The step that matters

Baking until just set. Eggs set as they heat, so pulling the pudding out too early leaves it runny, while overbaking makes it dry and rubbery. Golden brown colour comes from browning of sugars and proteins at the surface.
