Salt Cucumber Pickles
Ingredients
Directions
Place fresh, unwashed cucumbers in a vessel and cover with boiling water.
Once cooled, pour off the water and cover again with hot water.
When cooled, transfer cucumbers to a cask filled with brine strong enough for salt to settle at the bottom.
Stir thoroughly each time you add fresh cucumbers, ensuring salt remains at the bottom.
When the cask is full, cover the pickles with a cloth and a slight weight.
Occasionally remove and rinse the cloth.
